🍓 Strawberry Tart

🧺 Ingredients

🥚 For the pastry base:
• 200g all-purpose flour
• 50g almond flour
• 100g cold butter
• 2 eggs
• 100g sugar
🍋 Flavourings & seasonings:
• Lemon zest
• Pinch of salt
• 1 vanilla pod (with seeds)
🍮 For the custard cream:
• 250ml milk
• 100ml cream (or more milk)
• 3 egg yolks
• 60g sugar
• 1 tbsp cornstarch (frumina)
🍓 For the decoration:
• 300g fresh strawberries
• 50ml water
• 2 tbsp sugar
• Juice of half a lemon

👩‍🍳 Instructions

🌀 1. Make the pastry dough: Grind the almonds until they’re almost a flour. Place both flours and the sugar on your work surface, form a well in the center, and add the butter (cut into small pieces), lemon zest, eggs, and a pinch of salt. Knead quickly into a smooth dough, form a ball, wrap it in cling film, and chill it in the fridge for 30 minutes.

🔥 2. Prepare the custard: Heat the milk and cream in a saucepan with the vanilla pod and seeds. Bring gently to a boil, then turn off the heat and let the vanilla infuse for 5 minutes.

💡 3. Mix the egg yolks with sugar until light and fluffy. Remove the vanilla pod from the milk, pour in the egg mixture, then gently heat while stirring. Add cornstarch and stir constantly until the cream thickens. Let cool.

🧯 4. Bake the tart shell: Roll out the chilled dough and place it in a tart tin. Trim excess edges and prick the bottom with a fork. Line with baking paper and fill with dried beans for blind baking. Bake at 180°C (356°F) for 20 minutes, then remove beans and paper and bake another 8–10 minutes. Let cool.

💧 5. Make the glaze: Heat water and sugar until boiling. Add the lemon juice and let it reduce slightly. Remove from heat and let cool.

6. Assemble the tart: Spread the custard in the tart shell, arrange the strawberries, and brush with the glaze. Chill in the fridge for at least one hour. Your tart is ready to impress!
